In a family-run business, it’s easiest and best to just keep doing things the way they’ve always been done.

Myth
It’s not uncommon to hear, “that’s how we’ve always done it,” when I ask restaurant owners why they’re doing things the way they’re doing them. Sometimes it has everything to do with the elder in the family business and sometimes is has more to do with just not knowing there is a better way to do things. But whatever the reason, today’s prices for food and supplies coupled with changing technology and the corresponding expectations of diners makes it impossible to rely on how it’s always been done. Restaurant owners need to use their POS system’s reports and tools, project their sales and establish budgets. They need job descriptions and organizational charts outlining every person’s role in the restaurant. This is true in all restaurants, whether family-owned or partner-run. You can’t let your relationships define your operations. There are systems for that.
